Jack Daniel’s Dinner was held at the Hard Rock Café at Hard Rock Hotel & Casino Sacramento at Fire Mountain as a one-night Tennessee whiskey pairing — four courses, four crafted cocktails, and live country from Dustin Saylor — everyone enjoyed the music. This wasn’t a standing menu you can reorder next Tuesday; it was a branded event night, the kind Hard Rock books when a big name whiskey brand wants a full house.

The pairing board was straightforward and fun: crispy pork belly, a bright green goddess salad, braised short rib, and a lavender lemon posset for dessert, each matched to a Jack Daniel’s expression (Gentleman Jack, Tennessee Honey, Single Barrel Select, and Tennessee Blackberry). Between courses, Dustin Saylor kept the room in a country-bar groove without drowning out the table talk — everyone enjoyed the music.

First course — crispy pork belly + Jack & Ginger

Dinner opened with crispy pork belly — grilled peaches, whipped ricotta, orange gastrique, toasted pistachios, and micro basil — next to a Jack & Ginger featuring Gentleman Jack. The belly had that glassy sear and soft middle you want; peach and pistachio kept it from feeling too heavy. Gentleman Jack’s smoother profile made sense against ginger spice and a little citrus.

Second course — green goddess salad + Honey Smash

Course two was the Gem Green Goddess Salad — gem lettuce, radish, cucumber, snap peas, pepita seeds, shaved fennel, green goddess dressing — poured with the Honey Smash (Jack Daniel’s Tennessee Honey). Cool mint, bright lemon, and mellow honeyed whiskey notes: this was the favorite cocktail of the night. Easy to drink, not cloying, and a better mid-dinner reset than a stiff Manhattan would have been at that point in the flight.

Third course — braised short rib + Manhattan

The main event on the plate was braised short rib over sweet corn puree with charred broccolini, pearl onions, and red wine reduction, paired with a Manhattan built on Jack Daniel’s Single Barrel Select. Flavor-wise the short rib was the favorite dish — rich sauce, soft corn, those little onions — the kind of plate you still think about in the parking lot. One honest note: by the time it landed, it was warm rather than properly hot. Still delicious, but a hotter pass would have put it over the top. The Single Barrel Manhattan brought caramel and vermouth spice that fit the beef better than a sweet cocktail would have.

Fourth course — lavender lemon posset + Blackberry Lemonade

Dessert closed with lavender lemon posset and blackberry compote in a little jar, next to a Blackberry Lemonade featuring Jack Daniel’s Tennessee Blackberry. Tart lemonade, lush berry, and a whiskey kick — juicier and brighter than the Honey Smash, a solid finish if you still wanted something cold and tall after short rib.

If the Hard Rock Café at Fire Mountain books another Jack Daniel’s (or similar brand) dinner, go for the full ticket when you can — the format is built for a long evening: food, cocktails, and a live act. Just hope the short rib comes out steaming next time.
